How to Sterilize Glass Jars for Canning & Fermenting
Whether you are putting up a batch of jam or starting a ferment, clean jars are the foundation of safe, successful results. Sterilizing your glass jars removes the bacteria and residue that can spoil your food or ruin a ferment. The good news is that it is quick and easy. Here is how to sterilize glass jars properly, step by step.
Why Sterilizing Matters
Glass jars may look clean straight from the cupboard, but invisible bacteria, yeasts, and soap residue can still be present. In canning, that can compromise the seal and the safety of your preserves. In fermenting, stray microbes compete with the good bacteria you are trying to cultivate, leading to off flavors or mold. A few minutes of sterilizing sets every batch up for success, and it is well worth the small effort. Thick, durable jars like our 1 Gallon Glass Mason Jars with Metal Lids handle the heat of sterilizing without trouble.
The Boiling Water Method
The classic approach is simple. Wash your jars in hot, soapy water and rinse well. Place them upright in a large pot, cover them completely with water, and bring it to a boil. Let the jars boil for about ten minutes, then carefully remove them with tongs and set them upside down on a clean towel to air dry. Smaller jars like our Half Gallon Wide-Mouth Mason Jars are easy to handle this way and fit several to a pot.
Oven and Dishwasher Options
If boiling is not practical, you have alternatives. For the oven method, wash the jars, then place them on a tray in an oven heated to around 275 degrees for about twenty minutes. A dishwasher run on its hottest sanitizing cycle also works well, and has the bonus of leaving jars warm and ready to fill. Genuine canning jars like our Ball Half Gallon Mason Jars are made to withstand all of these methods.
Whichever method you use, fill your jars while they are still warm if you are hot-packing preserves, since adding hot contents to cold glass can cause it to crack.
Start Every Batch Clean
Sterilizing is a small habit that protects all the effort you put into canning and fermenting. Build it into your routine and you will get cleaner flavors, better seals, and far fewer failed batches.
